Just dropping this bowl of “cheezy” hummus pasta onto your screens on a Saturday lunchtime, because who doesn’t need a bit of pasta inspiration in their life? It’s my go to when I’m feeling lazy in the kitchen, but I still fancy something tasty and packed full of goodness. For the subtle “cheezy” flavour I like to use parmesan cheese or nutritional yeast - I went for parmesan this time, as I had a block in the fridge, but both work really well! As per usual, I love adding frozen peas, for fibre, protein and all round deliciousness, plus they’re my go to freezer fallback. Throw in a few other veggies, I love to mix up the colours, and you’ve got yourself a meal.
To make the sauce (for 1 person) combine: 3 heaped tbsp (approx 75g) of hummus (@moorishumous smoked hummus is delish) // 1/2 cup cooked peas (or tinned beans) // 2-3 heaped tbsp parmesan cheese (or nutritional yeast) // 1 tsp olive oil // 1 tsp wholegrain mustard // + black pepper. Cook your chosen pasta as per instructions (I used @mr_organic wholewheat penne) and then mix everything together. I added in some chopped cherry tomatoes and sautéed greens for a couple of extra portions of veggies. Simple as!
