Arroz con Leche 💕
You don't need a special or fancy rice. My mom only used milk, but to cut time for thickening, I use 1 can of evaporated milk and 2 cups of milk. 2% is what we drink. You get the same end result either way. There's only the difference in time. This can be made ahead of time & heated up.
I purposely make mine really thick (pic) because I often make this ahead of time. I add milk when heating it back up. I like surprising my husband with it.
This recipe is, as if, you will serve it immediately, after cooling a bit & makes approx. 4 cups. The container shown is a 5 c measure.
2.5 c water
1/4 t salt
Cinnamon stick (I use about 15")
1 c plain white rice
4 c milk, OR
1 can evaporated milk & 2 c milk
2/3 - 1c sugar (explained below)
I like making a "tea," with the water, salt, & cinnamon stick first. Then I add the rice. Feel free to combine the rice, cinnamon, salt & water all at once.
Cover & bring to a boil. Reduce to simmer: 15 minutes or until your liquid has mostly evaporated/absorbed. Don't let your rice burn, but don't add water.
Add 4 c milk, OR
1 can evaporated milk & 2 c milk. I add the sugar here. It stirs in easier at this point. Simmer 15 minutes, stirring occasionally, keep covered.
1 cup of sugar is too sweet for my husband's taste. It will be as sweet or slightly sweeter than vanilla ice cream w/1 cup of sugar. My mom's version was mildly sweet. You could use 2/3 c sugar.
Remove lid, raise heat to med.high, & stir 5 -10 minutes until pudding/oatmeal-like consistency. I switch to a flat edged wooden spatula to scrape the bottom as I stir. I reserve my cinnamon sticks for adding to smoothies later.
Cool 15 minutes.
If it becomes too thick, add fresh milk to thin as needed. Do the same later on, or following day to thin it.
I purposely a lot (recipe amount) so we can eat it the following day. You can add raisins while it cooks, or add nuts as toppings. We like it simple, as is 😋
